Searching for a PDF to text converter mostly turns up online services that take your file, extract the text on their server and send it back. For a public brochure that is fine. For a bank statement, a contract or a medical letter it is a poor trade, because the whole document leaves your device just so you can copy some words. iLoveDevTools's PDF to Text does the extraction in your browser tab with pdf.js, so the file is not uploaded.

It only reads text that is really there. A scanned PDF is a set of pictures, so there is nothing to extract, and the tool says how many pages had no selectable text. For those, run OCR PDF first. Multi-column pages are read across the columns line by line, so the columns can interleave, and tables are not rebuilt: a row's cells come out on one line. Formatting, fonts and images are dropped because the output is plain text.

When another tool is the better fit

Heavy layout needs. If you need columns, tables and reading order reconstructed accurately, a desktop PDF editor or a command-line tool such as pdftotext with its layout options gives more control than a browser tool.

Headings and lists as Markdown. If you want the structure kept as headings and bullets, PDF to Markdown guesses those from font size. For slides with editable text, there is PDF to PowerPoint.

Just a sentence. If you only need to copy a line or two, selecting it in your PDF reader is quicker.

For a private, no-signup way to get the text out of a digital PDF, with page selection and an honest note about scans, try PDF to Text. For scans use OCR first, and for complex multi-column layouts expect to tidy the result or use a layout-aware desktop tool.
